It’s been one year since we moved to Cornwall and I wanted to share a couple of thoughts:
Today is Pancake Day. What are you doing? Tell me below if you like. My kids are so excited - in fact we all are. I just love this celebration. It’s a kind of proof that there is always joy to be found in the small things.
I always use Delia Smith’s foolproof crepe recipe. I think the addition of melted butter really helps stop the batter sticking. Of course the butter makes it a little richer too, but that is no problem - especially because I then find I don’t need to keep adding it between each pancake/crepe. I would also advocate for a hot pan.
We will have Ottolenghi’s cheesy curry crepes with mango sauce for our main this evening - I’ll throw a few handfuls of spinach in too. Recipe here. It uses up store cupboard ingredients with a protein of either ham, left-over chicken or butter beans, but you could use up what you have.
You can’t beat lemon and sugar. The boys also love maple syrup and my favourite chocolate spread is this one by Islands - it has plenty of hazelnuts and no palm oil. It’s just the best. (TIP: They make the same chocolate spread for Gail’s - you can buy jars in-store.)
Second thought:
It’s been one year since we moved down here from Surrey. The kids haven’t always found it easy settling into new schools. Dom and I are sometimes overwhelmed by the task ahead with our house and garden. But now one year on, this feels like home - and I think that’s true to say for us all. The outdoor life is a good one. Horse-riding for me, park runs along the Fal estuary at Trelissick for us all, surfing for Dom, football, cricket and sailing for the boys…and, of course, the beaches. It was so cold when we first arrived and now the house feels warm (the addition of a roaring fire in the living room helped). We know it now, and I think if I was talking to anyone about moving house, especially this far, I would just say it really does take time to settle in. This isn’t a quick process. Today, spring is here with all the promise of bright months ahead, so…
